Deconstructed Dragon Roll
Making sushi, specifically a Dragon Roll can be a little daunting. But with this recipe, you can have many of the same flavours of a dragon roll with way less hassle. Normally, a Dragon Roll features shrimp tempura, but we've omitted that ingredient for simplicity.
Also, generally speaking, anytime you see vinegar or wine as an ingredient in a recipe, you can substitute a Grisette (such as our À La Minute Grisette) or any Saison instead. It adds a little extra to the meal and makes for a better complementary pairing with the final meal itself.
1 cup sushi rice (uncooked)
150g smoked salmon (flat frozen pack work best)
1 tbsp Rice vinegar or Sushi Rice Mix or À La Minute Grisette or Saison
1/2 cucumber slices
1/2 avocado slices
Pickled Ginger and Wasabi on the side
3 sheets Nori or pack of seaweed snacks
Cook sushi rice as per package instructions. You can use regular rice if you can’t find sushi rice, you will just want to add an extra half cup of water when making it.
Anytime a recipe calls for a light vinegar or broth, you can substitute part or all of what the recipe calls for using beer instead. It adds a bit of extra flavour and makes pairing the meal with that beer a no-brainer.
Add your tablespoon of beer or vinegar to the rice, along with a tablespoon of sesame oil, mix it up and transfer to a shallow casserole dish. Evenly distribute the rice and cover the bottom of the dish. Allow it to cool for about 10 to 15 minutes.
Next sprinkle toasted sesame seeds all over the rice. Mix 1 tablespoon sriracha with 1 tablespoon mayonnaise. Drizzle evenly over the rice. If you have a plastic squirt bottle that makes it easier.
The rice should be warm to the touch but no longer steaming before the next stage. Spread out the smoked salmon over the rice, completely covering it. Next added sliced cucumber and avocado on top of the salmon. Sprinkle with more toasted sesame seeds.
Cut the Nori sheets into 4 equally sized pieces and put on a separate plate. Lastly garish the salmon with wasabi and pickled ginger.
To eat, take a spoonful of rice, salmon, cucumber and avocado and place in the centre of the mini Nori sheets. Fold over and enjoy!
